More than 2000 species of insects are already eaten regularly in some part of the world. That's a really big existing base of demand, and it changes the nature of Western market growth. The problem is not to convince consumers from scratch that eating insects is acceptable.

But to come up with a formulation and a brand that packages insect protein into something familiar, such as protein bars, shakes, or pet food, without making insects a novel food item to the consumer.
